Upscale hospitality properties JW Marriott Mauritius Resort and Le Méridien Ile Maurice, operating under the franchise licence of Marriott International, are launching four new concept restaurants in time for the festive season.

According to a press statement by the hotels, JW Marriott Mauritius Resort has announced the debut of its new dining concepts, Indya and The Boathouse Aegean Beach Grill and Lounge. The new restaurants will feature redesigned menus, created by newly-appointed Executive Chef, Zulfikar Cambaz. Turkish and Greek dishes will be prepared with the best of homegrown produce, as well as working with local fishermen, says the statement.

The hotel group adds that highlights from the dinner menu include salted Seabass Marin marinated in fresh herbs and served with orange, rosemary, fresh oregano, mustard and olive oil, Bodrum-style Tiger Prawns cooked with a garlic-tomato sauce, white wine and topped with Turkish feta cheese, and salt-crusted whole Mauritian Red Drum, served in flames with grilled asparagus, potatoes and a Rocca salad.

“We are thrilled to bring provenance to life on the plate. Our wish is to delight diners with Aegean-inspired authentic flavours cooked over a wood-fired grill,” says Cambaz.

The hotel says that Indya brings a modern twist to traditional Indian cuisine under the helm of new Executive Chef, Malik Basha, a 2023 Michelin Bib Gourmand award winner.

Le Méridien Ile Maurice has announced the opening of two new restaurants, Waves and Jade that offer immersive culinary journeys inspired by the bounty of the Indian Ocean and Asia’s culinary masterpieces.

The statement adds that Waves, a beachside brasserie channelling the essence of coastal living and inhabits the resort’s stunning oceanfront venue that formerly housed Zoli Mamzel. The design focus is striking with sleek lines and stylish touches and hues that echo the beach. By day, Waves invites guests to gather for leisurely lunches centred around a sizzling barbecue brasero, where grilled lobster and red tuna is expertly paired with locally sourced produce. Enjoy fresh fish carpaccio and Mauritius style ceviche; tropical salads favouring palmiste, mango and octopus; and a delicious selection of burgers and sandwiches.

“The menu favours the island’s sustainably sourced seafood, while evoking a sense of place. We can’t wait for guests to experience the Creole culinary culture of Mauritius and beyond at our newly inspired seaside restaurant,’’ says Mathieu de Tonnac, General Manager.

The statement adds that pan-Asian cuisine takes centerstage at Jade, the resort’s new fine dining destination. Previously Paparazzi, the restaurant dons a new look informed by its gemstone namesake.
